It’s all too easy to stumble starving into the corner shop and grab the nearest sugary snack after a long run. Get these easy coconut and chocolate squares prepped at home and you’ll be sorted for pre and post-run fuel, delicious afternoon treats and packed lunch nibbles.

Why are these great for runners?

Desiccated coconut is packed with Vitamin C to help your body repair injuries, along with magnesium and calcium for healthy bones.

Coconut oil is primarily made up of medium-chain fatty acids, which are easier for your body to burn off than other forms of fat.

Dark chocolate contains the antioxidants catechin and procyanidin, plus it’s a source of iron, which can help ease fatigue.

Coconut and chocolate squares

100ml coconut oil

170ml date syrup, honey or golden syrup

170g oats

50g desiccated coconut

50g dark chocolate

1. Preheat your oven to 180°C. Line and grease a small, deep baking tin.

2. Melt the coconut oil and date syrup together over a low heat in a large saucepan. Stir in the oats and desiccated coconut thoroughly.

3. Transfer the mixture to the baking tin and push down firmly. Bake for 10-20 minutes or until golden brown on top. Remove and leave to cool in the tin.

4. Break the dark chocolate into chunks. Place in a glass bowl over a saucepan of hot water and leave to melt, stirring occasionally. Drizzle over the squares and leave to set.
