The what & how: 1/2 cup oats 1/2 @almondbreezesa milk 1/2 boiled water 1 tbsp cinnamon While mixing the above in a pot, start cooking your nana’s on a small pan in raw honey { about a tbsp } so that they can be ready at the same time ?? I added more cinnamon & almond milk to make a dope creamy texture. 100% guilt free, thick, rich mousse? Does that even exist? I tried my hand at the famous tofu mousse. Turns out it’s pretty amazing. For those of you who hate the taste of healthy, this is for you. Mine came out slightly too thick for my taste but if a firm hold mousse is what you like, its just about adjusting the almond milk content. 1/2 cup tofu (1 small block) 40g melted raw chocolate of choice (I used @monatechocolate 78% cacao) 3 teaspoons raw cacao powder 1/2 to 1 cup @almondbreezesa almond milk. 1 teaspoon sweetener of choice (I used Coconut sugar. Stevia or honey will do as well.) Whipped coconut cream and cacao nibs for topping. Blitz tofu using a stick blender or food processor until fluffy. Add melted chocolate, sweetener and cacao powder. Blitz again until fluffy. Add almond milk until desired consistency. Keep in mind as it sits, it thickens more. Rich & Fudgy Chocolate and Walnut Brownie ? (Gluten Free, Dairy Free & Vegan) I felt like celebrating today after a great few days ? These delicious brownies are packed full of goodness and are made using Black Beans! I have to say I was sceptical? But boy am I happy with the results. Rosie cannot even tell there are beans inside, and I am happy knowing she is getting a little protein punch. Ingredients * 1 3/4 cups black beans, well rinsed and drained * 2 large flax eggs (2 heaping Tbsp flaxseed meal + 6 Tbsp water) * 3 Tbsp coconut oil, melted * 3/4 cup cocoa powder * 1/4 cup desiccated coconut * 1.5 tsp pure vanilla extract * heaping 1/2 cup organic sugar * 1 1/2 tsp baking powder * crush walnuts for the top Place all the ingredients in a processor except the walnuts. Blend till beautiful and smooth. Pour into a lined baking tray or muffin tins, sprinkle with Nuts and bake at 170 degrees for around 25 minutes. Remove and let them cool before slicing. Don’t be alarmed as a prick test won’t work here. The knife will not come out clean. But that’s good!! We want them super moist. These brownies are so soft, delicious and incredibly decadent??? Delicious Zucchini, Corn & Chickpea Fritters with Avocado, Lime Cream ( GF, DF, Vegan) ☺️ INGREDIENTS: * 4 cups grated zucchini * 1 1/2 cups corn kernels * 3 garlic cloves, minced * 1 and 1/4 cup chickpea flour (I made my own. Simply blitz dried chickpeas in a processor until fine and sieve)I used @natureschoicesa dried chickpeas. * 2 teaspoons cumin * 1 teaspoon dried oregano * 1 teaspoon dried thyme * 1 Flax egg (egg substitute )- mix 1 Tbsp ground raw flaxseed to 2 1/2 Tbsp water. Allow to sit for 5 minutes DIRECTIONS: In a large bowl, combine all the ingredients. Stir together until well combined. Allow to sit for around 5 minutes. Fry in oil of choice. I like Coconut or Olive oil. The fritters are ready when they are golden and crispy on the outside and beautiful and fluffy on the inside. FOR THE AVO CREAM: Put two ? into a processor. Squeeze a generous amount of fresh lime. Season to taste ?Blend until creamy and fluffy. Eat immediately.
